Food Is More Than Calories
Modern nutrition focused on calories for a long time. The "eat less, move more" formula seemed simple — but it did not work. Obesity, chronic diseases and autoimmune conditions continued to rise globally. Because the problem was never the calorie count — it was hidden in the quality and function of the food being consumed.
Functional nutrition is the name of this paradigm shift. It views food not merely as an energy source but as the body's tool for repair, protection and performance. Every meal is an opportunity — you either improve or worsen.
Core Principles of Functional Nutrition
1. Nutrient Density
The first rule of functional nutrition: every bite matters. Instead of empty calories (white sugar, processed flour, trans fats), nutrient-dense foods are preferred. Nutrient density is the amount of vitamins, minerals, antioxidants and beneficial compounds a food provides per calorie.
Foods with high nutrient density:
- Dark leafy greens (spinach, kale, chard)
- Colourful vegetables (red peppers, purple cabbage, orange sweet potato)
- Oily fish (salmon, sardines, mackerel)
- Nuts and seeds (walnuts, flaxseed, chia)
- Fermented foods (kefir, pickles, kombucha)
- Fresh herbs and spices (turmeric, ginger, thyme)
2. Anti-Inflammatory Eating
Chronic inflammation is the modern era's greatest health threat. Heart disease, diabetes, cancer, Alzheimer's, depression and autoimmune conditions — all share chronic inflammation as a common denominator.
Foods that increase inflammation:
- Processed foods and fast food
- Refined sugar and white flour
- Trans fats and industrial seed oils
- Excessive alcohol
- Additives and preservatives
Foods that reduce inflammation:
- Omega-3 fatty acids (oily fish, walnuts, flaxseed)
- Polyphenols (olive oil, green tea, dark-coloured fruits)
- Curcumin (turmeric)
- Gingerol (ginger)
- Fibre (vegetables, legumes, whole grains)
- Probiotics (fermented foods)
Anti-inflammatory eating is the backbone of functional nutrition. At GreenUrla, every meal is designed according to anti-inflammatory principles.
3. Seasonal and Local Eating
Functional nutrition advocates aligning with nature's rhythm. Seasonal foods are:
- More nutritious: A tomato harvested in season contains 3-5 times more lycopene than a greenhouse tomato.
- More flavourful: The natural ripening process is complete.
- More sustainable: No long-distance transport required; lower carbon footprint.
- More economical: Oversupply drives prices down.
The Aegean seasonal calendar:
| Season | Highlighted Foods |
|---|---|
| **Spring** | Artichoke, broad beans, fresh garlic, wild herbs (purslane, chicory), strawberries |
| **Summer** | Tomatoes, peppers, aubergine, courgette, watermelon, peaches, figs |
| **Autumn** | Grapes, pomegranate, quince, olives (harvest begins), pumpkin |
| **Winter** | Citrus fruits, celeriac, cabbage, spinach, leeks, fresh olive oil |
4. Gut Health
Over the past decade, science has begun uncovering the role of the gut microbiome in overall health. The trillions of bacteria living in our intestines:
- Control 70-80% of the immune system
- Produce 90% of serotonin (the happiness hormone)
- Regulate nutrient absorption
- Control inflammation
- Affect brain function (the gut-brain axis)
Functional nutrition places special emphasis on foods that support gut health:
- Probiotics: Kefir, yoghurt, pickles, kombucha — nourish beneficial bacteria
- Prebiotics: Onion, garlic, leeks, artichoke — food for beneficial bacteria
- Fibre: Vegetables, legumes, whole grains — support gut motility
- Bone broth: Repairs the gut lining with collagen and gelatin
5. Bio-individuality
The most important principle of functional nutrition: there is no single correct diet. Everyone's genetics, microbiome, lifestyle and goals are different. A nutrition plan that is optimal for one person may be unsuitable for another.
This is why functional nutrition must be personalised. At GreenUrla, every guest's nutrition plan is created based on individual assessment.
Farm-to-Table: The Philosophy
Farm-to-table is a philosophy that advocates food reaching the consumer over the shortest possible distance, in the least processed form.
Why Farm-to-Table?
Nutrition: The shorter the time from harvest to consumption, the higher the nutritional value. A vegetable in the supermarket averages 5-14 days from harvest to shelf — vitamin loss during this period can reach 30-50%. With farm-to-table, this time shrinks to hours.
Flavour: Natural ripening + fresh consumption = unmatched taste. The flavour of a tomato picked from the garden is completely different from a supermarket one — everyone who has experienced this knows.
Sustainability: Long-distance transport, cold chains, plastic packaging — all carry environmental costs. Zero-kilometre food minimises the carbon footprint.
Transparency: You know what you are eating, where it comes from and how it was grown. No concerns about additives, pesticides or GMOs.
The GreenUrla Organic Farm
GreenUrla's farm-to-table philosophy is built on the organic farm at the centre of our campus.
What is grown?
- Seasonal vegetables (tomatoes, peppers, aubergine, courgette, beans, artichoke)
- Greens and herbs (rocket, lettuce, dill, mint, basil, thyme)
- Olives and olive oil (Urla's renowned cold-pressed olive oil)
- Fruit trees (figs, pomegranate, lemon, orange)
- Aromatic plants (lavender, rosemary)
Organic certification: No chemical fertilisers, pesticides or herbicides are used on our farm. Soil health is maintained through natural compost, crop rotation and beneficial insect management.
Guest experience: GreenUrla guests can optionally join the morning farm tour, pick herbs, harvest fruit and prepare the day's menu alongside the head chef.

Conclusion: Food Is Medicine
The words Hippocrates spoke two thousand years ago are now confirmed by science: "Let food be thy medicine and medicine be thy food." Functional nutrition combines this ancient wisdom with modern science.
At GreenUrla, we see food not merely as a necessity — but as therapy, ritual and pleasure. With ingredients harvested from our organic farm, our kitchen team is as much a part of your transformation journey as our STOTT Pilates instructors and coaches.
